INGREDIENTS
For the Dressing:
- 1 tbsp Groundnut Oil
- 1 tsp Toasted Sesame Oil
- ½ tsp Soft Brown Sugar
- 1 tsp Fish Sauce
- Rind and Juice of 1 Lime
- ¼ Cucumber, deseeded and cut into matchsticks
- 2 Carrots, peeled and cut into matchsticks
- 150g Beansprouts
- 1 x 200g Jar Ocean Crown Cooked & Pickled Cockles, drained
- 2 Spring Onions, finely sliced
- 1 Red Chilli, deseeded and finely sliced
- 3 tbsp Chopped Coriander
- 3 tbsp Chopped Mint
