For the filling:
- 200g finely diced sweet potato
- 1 x 200g jar Ocean Crown Cooked & Pickled Mussels, drained
- 1 x 200g jar Ocean Crown Cooked & Pickled Cockles, drained
- 3 spring onions, finely chopped
- 1 tbsp freshly chopped parsley
- Freshly ground black pepper
- 6-8 sheets ready made filo pastry
- 75g butter, melted
- 1 tbsp sesame seeds, optional
