Seafood Parcels

Serves 4-6

For the filling:

  • 200g finely diced sweet potato
  • 1 x 200g jar Ocean Crown Cooked & Pickled Mussels, drained
  • 1 x 200g jar Ocean Crown Cooked & Pickled Cockles, drained
  • 3 spring onions, finely chopped
  • 1 tbsp freshly chopped parsley
  • Freshly ground black pepper

 

  • 6-8 sheets ready made filo pastry
  • 75g butter, melted
  • 1 tbsp sesame seeds, optional

METHOD

Preheat the oven to 200ÂșC, Gas Mark 6.

Mix together the filling ingredients in a bowl and add 1 tsp of the melted butter.

Lay out the filo pastry one sheet at a time and brush with melted butter, fold into two. Place a spoonful of the filling on top and fold over the edges to form a parcel. Brush with melted butter as you go.

Repeat this process until all the filling and pastry has been used.

Place the parcels on a lined baking sheet and brush with melted butter. Sprinkle with sesame seeds.

Bake in the preheated oven for 25-30 minutes until crisp and golden.

Serve hot or cold.
