Salsa Salad with Cockles

Serves 4

  • 4 Large Tomatoes, skinned, deseeded and roughly chopped
  • 1 Yellow Pepper, deseeded and chopped
  • ½ Red Onion, chopped
  • 2 Green Chillies, finely chopped
  • Handful of Mint Leaves, roughly chopped
  • I 200g Jar Ocean Crown Cooked & Pickled Cockles, drained

For the Dressing:

  • 2 tbsp Lime Juice
  • 2 tbsp Olive Oil
  • 1 Clove of Garlic, crushed
  • Sea Salt and Freshly Ground Black Pepper

METHOD

Prepare all the salad ingredients and mix together.

Stir together all the dressing ingredients and mix into the salsa.

Serve with salad leaves and tortilla chips.
